Eggplant Sandwiches and Pepper Fries

I am on a mission to come up with things to fry in Lard. Seriously. My first attempt was with zucchini in a panko breading - as you can see I burnt about half of them.

So today I tried again and this time it was a SUCCESS!!
I made sandwiches with fried eggplant and pepper fries. Oh yea! Good stuff!
Eggplant Sandwiches with Pepper Fries
1/2 cup flour - wheat or a g/f choice
2 large eggs beaten (mine were still warm from the chicken)
1 cup breading - panko,  or a g/f variety
1 medium eggplant cut into 1/2 inch slices - should end up with 8
1/2 cup Lard or another good fat of your choice 
Salt
1-2  tomatoes sliced
1 avocado sliced
fresh basil leaves - one big one for each sandwich
4 oz. goat cheese crumbled (or shredded if you are me)
1 green or red pepper sliced into fries.

I started out with your standard flour, egg and crumb bowls. I sliced my smallish eggplant into 8 slices and then first cover in flour (you can use a g/f flour which is what I did) then put in the egg and then finally into the breadcrumbs (I used g/f). Once you have them all done fry them in oil - I used Lard! hmmm yum! Put your heat at about medium you don't want them to burn. When they were done I did the same thing with red/green pepper to make my fries.

Next I cut up an avocado into slices, sliced my tomato, crumbled my feta goat cheese (actually I shredded it) and rinsed my basil. 

I layered the eggplant then avocado, tomato, cheese, basil and then topped with another slice of eggplant. 

Recipe:

Results: 
1. I really liked this especially as a gluten free option - it tastes like a sandwich.
2. My kids - not so much. But part of that is they had never eaten veggies battered and fried before.
3. Next time I think I will make easy guacamole and use that instead of straight avocado just for a more wet taste - since there are no condiments on this and I love me some condiments.
4. I think it would also taste great with bacon, but then everything tastes great with bacon!
5. This would make a yummy meal to serve to my Church Lady friends at a small luncheon.

  2. except for the fact I don't like eggplant, I'd do this with zucchini!

    Did you know that Iron Chef Michael Symon cooks with lard frequently and there are studies that suggest it may be a healthier choice. (Weston Price foundation has info on this)

  9. Christy, I love you! On a mission to fry things in lard :) I was just thinking about this fried eggplant sandwich option the other day. Also, what about fried green tomatoes as a sandwich? Even looking at bread makes my stomach hurt these days, so thank you for this recipe.

  11. Yep christy, it takes some practice to use lard for frying. I also have had experiences like your first one! LOL But these eggplant sandwiches do look divine and I am glad you got the lard thing figured out!
