BBQ Sauce

One of the first things I ever made  from scratch was BBQ sauce. I had run out and needed some for dinner. I must have looked in a dozen cookbooks - this was in the olden days you know BI (before internet). What I came up with was really good - it was a mixture of several different recipes - which is what I do. Recently I needed BBQ sauce and this is what I came up with - it is good and spicy.

BBQ Sauce

1 TBS coconut oil (olive oil or butter would work also)
1/2 a small onion chopped small
1 garlic clove, chopped fine
1 cup of ketchup - I used organic - homemade would be amazing
1/4 cup apple cider vinegar
2 TBS brown sugar
2TBS Dijon mustard
2 tsp. worcestershire sauce
1/4 cup molasses
1 TBS chili powder
pinch of cayenne pepper
3/4 cup water
salt and pepper to taste. (I use about a 1/4 tsp each)

Heat oil in a pan over medium heat, add onion and garlic. Cook stirring often until softened - 3-5 min.
Add remaining ingredients and simmer gently stirring occasionally until it thickens slightly. It keeps in the fridge for about 2 weeks.

This is amazing to baste chicken, beef, pork or sea food during the last couple of minutes of grilling. I also use it to make pulled pork. Serve extra sauce on the side for dipping. What do you put BBQ Sauce on?
