Homemade, Fermented, Tabasco Sauce

Hello Bloggie (or is it bloggy? I never know for sure) friends. It has been a long, long week. My mother-in-law passed away unexpectedly last Saturday and we have spent the week doing funeral things. And eating lots and lots of processed foods, lots of it cooked in nasty fats, and very very little Real Food. Sigh.

Now it is time to jump off the SAD diet and back on the REAL FOOD train. Today I made my first Christmas present. Yes I did. I made it last year for my daughter's boyfriend. I am making it again this year for many more spicy lovin' people. Homemade, fermented, tabasco sauce - it is kickin' hot and amazingly easy.

I found the "recipe" at Michelle's HealthFoodLover Blog. She is one of my amazing co-hostesses of the Two for Tuesday Real Food Blog Hop. I am linking you here to her original post - she explains so well how to make the tabasco.

I am just sharing the short version:
15-20 chilis  (I don't know what kind I used - the lady at the Farmer's Market told me but I forgot to write it down, they are the HOT kind)
2 TBS Himalayan Sea Salt
2 TBS Apple Cidar Vinegar

Put it all in a blender, blend until it is pourable - like a tomato sauce.

Put in pan on stove, bring to a boil. She says to simmer till it thickens a bit.
WARNING: the fumes can be noxious - do not under any circumstance stick your nose in the pan and breath in - don't ask how I know, just trust me!

Put in a glass container with a lid. Let ferment for about 2 weeks and check for taste - can be kept for up to 3 years. Be sure to check this often as it is fermented and may need the top loosened to let out the gases.

  1. Oh Christy, I can't tell you how many times I've pepper gassed myself while making chile treats in the kitchen. I'm glad I'm not the only one.

  2. I have never heard of making homemade tabasco sauce - but it sounds wonderful! Now - if only my hot peppers would start to produce!

  7. I would love to try this but my husband doesn't even like a little black pepper on his food. I do use some spicy flavors but they are so mild, you would laugh.

    Maybe, I will try this just for myself.

    I think it is a great idea to make as much of what we use, ourselves. We can regulate it to our tastes and we know what we are eating.

    I am working on it.

  9. I was making a sweet and spicy BBQ sauce yesterday and stuck my nose over the pot to get a sniff of it. Let's just say it cleared my nasal passages! :)
    I hope to try making homemade hot sauce of some sort this fall- thanks for the recipe!!!
