Chickpeas and Coconut Basmati Rice
One of the reasons I blog is so I can "remember" food concoctions that I make up and can hopefully repeat again if it is a winner. Today I made a winner.
It is very simple, you see, I had surgery on Friday and food just doesn't sound good. GASP! I know, I know, who would have thought those words would ever be seen here? Certainly not me.
I have been trying to listen to my body - like my friends Alex @ amoderatelife and Butterpoweredbike @ Rendering Lard are always talking about - well my body wants soft, comfort food. Food chuck full of nutrition so I don't have to eat very much of it.
I stood in the pantry and wondered what in the world would fill that need. I had made the rice for dinner, so I knew that would work. I also knew I had the chickpeas thawed in the fridge. The coconut milk started calling my name "Christy, Christy I will taste delicious and help your tummy heal" I swear that is what it was saying.
I am pretty sure I will be eating this again for lunch, because like Heather @Girlichef my kids are all off to school and Mamma can eat ANYTHING SHE WANTS!
Chickpeas in Coconut Rice
1 cup cooked Basmati Rice (I soaked it for 10 hours in water with apple cider vinegar first)
1 cup soaked, cooked chickpeas - I had these in the freezer, they were cooked in homemade chicken broth.
1/2 tiny can of coconut milk (5.46fl.oz)
several liberal sprinkles of curry powder (did you know curry is very healthy??)
sea salt and pepper
If I had felt better I might have added some onion and celery maybe.

I love rice with coconut milk and the chickpeas just makes it even better.

I love this. I know what you gals mean by your body talking to you. There are times, I can't figure out why I want a particular food but it fills the need.

Hmmm, I have never made rice like this(soaking in vinegar) I will have to look into that some more. Rice is often on the menu because every one loves it. And I like anything coconut, you didnt have to say anything else! lol

I make this too but add a bunch of veggies. Whatever I have lying around. Coconut milk and curry can make ANYTHING wonderful :)
