I know there are some great Marinara Sauces out there but my family wants meat in their sauce! Today for lunch I made a super simple yet very tasty Meat Sauce for Spaghetti.
2TBS or so of coconut oil
1 lb hamburger - grass fed beef (organic if you don't know your farmer)
1 small onion, diced
2 cloves garlic, diced
1/4 cup mixed diced peppers (mine were in the freezer - optional)
1 bay leaf (remove when done cooking)
1/ tsp dried oregano
OR 2 tsp Italian Seasonings
1/2 tsp of sugar
1 large can of oven roasted tomatoes
1 small can tomato paste
1 cup water
1 or 2 cubes of any frozen veggie you want to add - spinach or kale is really good
Squirt of anchovy paste if you have it.
Salt and pepper to taste (I don't salt because I salt my pasta)
(I often add other veggies like carrots and celery to the sauce - sauteing with onions.)
Begin with hot oil - add onions and peppers, and garlic until they start to soften, then add meat and brown.
Add the rest and bring to a boil, lower to a simmer and cook for at least 20 minutes - more if you have time for the flavors to marry.
Cook 16 oz of pasta (any regular or g/f pasta) in heavily salted water as long as your package says. Drain
and top with sauce and freshly grated parmesan cheese. Serve with garlic bread - I buttered hotdog buns and topped with garlic powder and then broiled.
