I made this one night and it turned out fabulous. Unfortunately I have no pictures.
Ingredients:
1 zucchini sliced
1/4 onion diced
1 cup green beans
Extra virgin olive oil - 2x around the pan
2TBS butter
salt and pepper
4 oz. mini scallops
Half cup real whipping cream
First I made the veggies - thinly sliced zucchini, onions and green beans - an odd combo but it is what I needed to eat up. I sauteed them in extra virgin olive oil and butter, salt and pepper. Once I removed this from my iron skillet I added 4oz of mini scallops (thawed) and cooked for about 4 minutes then I added a half a cup of whipping cream to the pan and continued cooking for several more minutes. It made an amazing sauce that would have tasted even more amazing over noodles.

I never know what to do with those little scallops. I want them to brown, but of course, they're too small to take on color before turning to rubber. But cream, now there's a solution!

ReplyDeleteHey Christy dont you hate that when you make something absolutely delicious and haven't set up to take a picture? i leave my camera and my lights and tripod in my dining room on the off chance that a recipe turns out amazing! My husband will like this--not a big seafood person myself, but if we get the bay scallops we usually get in a week or two, I will try it! :)
